We exchanged gifts this year in under 5 hours wich was a new record. Christmas was a wonderful experiance this year in spite of all the heartache we have experienced.

Diane's Holiday Prime Rib

The formula is
5 minutes per pound =(MR)
6 minutes per pound =(M)
7 minutes per pound =(W)

Use any size roast and figure ½ pound per serving
Preheat oven to 550 degrees and accurately calculate your cooking time.





A 10 pound roast would be 50 minutes for (MR), 60 minutes for (M) and 70 for (W)

Rub the roast well with salt, pepper, garlic and your favorite dried herbs.

Place roast in roasting pan with fat side up on middle rack for your calculated minutes at the 550 degrees.

DO NOT OPEN THE DOOR OF THE OVEN!!!

Leave roast in for calculated minutes and then turn the oven off. Leave the roast in the oven for 2 hours. No more or less and NEVER OPEN THE OVEN DOOR until the two hours are up

Horseradish Sauce:
¾ cup prepared horseradish
½ cup sour cream
2 teaspoons Dijon Mustard
2 tablespoons mayo
2 tablespoons chopped chives
Salt and pepper to taste
Blend well and chill for two hours. Make as soon as you place roast in oven.
